Crispy air fryer eggplant Parmesan rounds - a delicious, healthier twist on a classic. Perfect for a simple and tasty vegetarian appetizer.
Ingredients:
  • 0.5 cup Italian bread crumbs
  • 0.25 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 cup flour
  • 2 large eggs, beaten
  • 1 medium eggplant, sliced into 1/2-inch rounds
  • 1 cup marinara sauce, or more to taste
  • 8 slices mozzarella cheese, or as needed
Instructions:
  • In a shallow bowl, mix together bread crumbs, Parmesan cheese, Italian seasoning, salt, basil, garlic powder, onion powder, and black pepper. Place flour in another shallow bowl and beaten eggs in a third shallow bowl.
  • Prepare the sliced eggplant by coating it in flour, then dipping it in beaten eggs, and finally covering it with a bread crumb mixture. Allow the coated eggplant to rest on a tray for 5 minutes.
  • Preheat the air fryer to 370°F (185°C).
  • Arrange the breaded eggplant rounds in the air fryer basket without overcrowding. Air fry for 8 to 10 minutes, flip them over, and air fry for an additional 4 to 6 minutes until desired crispiness.
  • Add marinara sauce and a luscious slice of mozzarella cheese on top of each eggplant round. Return the basket to the air fryer and cook until the cheese is gooey and melted, which should take about 1 to 2 minutes. Repeat with any remaining eggplant slices as needed.
