Air-fried Eggplant Parmesan Pizza Pockets - a delightful handheld fusion dish.
Ingredients:
  • 1 medium eggplant, sliced into 1/2- inch rounds
  • salt to taste
  • 1 egg, beaten
  • 1 tablespoon water
  • 1 cup Italian bread crumbs
  • 0.25 cup freshly grated Parmesan cheese
  • cooking spray
  • 4 ounces pizza sauce
  • 1 (2.25 ounce) can sliced ripe olives, drained
  • 8 ounces shredded mozzarella cheese
  • 1 tablespoon chopped fresh basil for garnish
Instructions:
  • Arrange the eggplant rounds on a large cutting board, sprinkle lightly with salt on both sides, and allow to rest for 10 minutes. Gently pat dry with paper towels. Preheat the oven to 250 degrees F (120 degrees C).
  • Whisk egg and water in a mixing bowl. Combine bread crumbs and Parmesan cheese on a flat plate. Line a rimmed baking sheet with aluminum foil and place a cooling rack on top.
  • Coat each eggplant round in beaten egg followed by bread crumbs.
  • Preheat the air fryer to a sizzling 400 degrees F (200 degrees C and spritz the basket with nonstick cooking spray.
  • Arrange eggplant rounds in the basket, ensuring they have enough space around them. Spritz the tops with cooking spray and cook for 10 minutes. Transfer to a cooling rack and keep warm in the preheated oven. Repeat with the rest of the eggplant rounds.
  • Top each eggplant round generously with flavorful pizza sauce. Sprinkle with savory olive slices and finish with a generous layer of gooey mozzarella cheese.
  • Position the oven rack 6 inches below the broiler and preheat the broiler on high.
  • Place your eggplant slice pizzas under the broiler for about 4 minutes, or until the cheese is perfectly melted. Finish by garnishing them with fresh basil.
