Air fryer roasted baba ganoush - creamy eggplant and garlic dip with bold flavor. Great for parties with pita chips.
Ingredients:
  • 1 medium eggplant, halved lengthwise
  • 0.5 teaspoon kosher salt
  • 5.5 tablespoons olive oil, divided
  • 1 bulb garlic
  • 0.25 cup tahini (sesame seed paste)
  • 2 tablespoons lemon juice, or more to taste
  • 0.25 teaspoon ground cumin
  • 0.125 teaspoon smoked paprika
  • 2 tablespoons crumbled feta cheese
  • 1 tablespoon chopped fresh parsley
  • 0.5 teaspoon lemon zest
Instructions:
  • Salt the cut sides of the eggplant, allowing it to rest for 20 to 30 minutes. Then, pat dry with paper towels.
  • Preheat your air fryer to a perfect 400 degrees F (200 degrees C).
  • Coat eggplant cut sides with a generous drizzle of 1 tablespoon olive oil. Remove the top 1/4 inch from the garlic bulb to expose the cloves, then lightly brush them with 1/2 tablespoon olive oil before wrapping the bulb in foil. Arrange both eggplant and garlic in the air fryer basket.
  • Air fry until the eggplant and garlic are tender and the eggplant is a deep golden brown, for 15-20 minutes. Let cool for about 10 minutes before serving.
  • Combine eggplant flesh, tahini, lemon juice, 4 cloves of roasted garlic, 4 tablespoons olive oil, cumin, and paprika in a food processor. Pulse until smooth. Garnish with feta cheese, parsley, and lemon zest.
