Air Fryer Vegan Tofu and Asparagus Scramble

Air fried tofu asparagus scramble - a delicious and healthy vegan breakfast alternative to scrambled eggs.
Ingredients:
  • 0.5 cup soy sauce
  • 0.5 cup brown sugar
  • 0.5 cup mirin (Japanese sweet wine)
  • 2 tablespoons raw whole almonds
  • 1 (12 ounce) package firm tofu
  • 0.5 pound fresh asparagus spears, cut into 1-inch pieces
  • olive oil cooking spray
  • 1 teaspoon olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon rice vinegar
  • 0.5 teaspoon garlic powder
  • 1 tablespoon nutritional yeast
  • salt and pepper to taste
Instructions:
  • In a small saucepan, simmer 1/2 cup soy sauce, brown sugar, and mirin over medium heat until the sauce reduces by half, about 5 to 10 minutes. Let it cool to thicken.
  • Place raw almonds in a small bowl and cover with water. Let soak for 10 minutes, drain, and cut into thirds or smaller pieces if preferred.
  • Wrap the tofu block in paper towels and firmly squeeze out excess water using your hands. Keep it on a cutting board for later use.
  • Arrange the asparagus spears in a single layer on the crisping tray in the air fryer basket and gently coat them with olive oil cooking spray.
  • Preheat air fryer to 375°F (190°C) and cook asparagus for 10 minutes. Pause at the 5-minute mark to shake the basket vigorously, then resume cooking. Transfer cooked asparagus to a large bowl.
  • In a large bowl, combine olive oil, 1 teaspoon soy sauce, rice vinegar, and garlic powder. Cut tofu block into 1/2- to 1-inch cubes and gently coat them with the mixture, being careful to keep cubes intact. Sprinkle with nutritional yeast before serving.
  • Arrange the seasoned tofu cubes on the crisping tray in the air fryer basket. Air fry at 375 degrees F (190 degrees C) for 10 minutes, shaking halfway through cooking.
  • Combine tofu cubes and asparagus pieces, gently breaking up some tofu cubes for a hearty texture. Drizzle with sweet soy sauce and sprinkle with chopped almonds.
