Crispy Buffalo tofu bites made in the air fryer without oil, using frozen tofu for perfect chewiness.
Ingredients:
  • 1 (8 ounce) container extra-firm tofu
  • 4 tablespoons cornstarch
  • 4 tablespoons unsweetened rice milk
  • 0.75 cup panko bread crumbs
  • 0.125 teaspoon garlic powder
  • 0.125 teaspoon paprika
  • 0.125 teaspoon onion powder
  • 0.125 teaspoon freshly ground black pepper
  • 0.66666668653488 cup vegan Buffalo wing sauce (such as Frank's®)
Instructions:
  • Remove the tofu from the package, discard the liquid, and wrap it in cheesecloth. Place it on a plate and cover with a heavy pot for 10 minutes to squeeze out remaining liquid. Cut the tofu into 20 bite-sized pieces and freeze in a container for 8 hours or overnight.
  • Thaw the tofu on paper towels or a dry cheesecloth, then pat it dry.
  • As the tofu thaws, add cornstarch to a resealable plastic bag and pour rice milk into a small bowl.
  • Preheat the air fryer to 375°F (190°C).
  • Coat tofu in cornstarch by shaking in a bag, then dredge each piece in rice milk.
  • Combine bread crumbs, garlic powder, paprika, onion powder, and pepper in a resealable plastic bag with cornstarch residue; shake vigorously until evenly mixed. Individually coat each piece of tofu in the seasoned bread crumbs by placing in the bag and shaking until fully covered. Gently tap to remove excess coating and transfer the tofu to a wire rack. Repeat with the remaining tofu pieces.
  • Place the tofu in the air fryer and cook for 10 minutes. Shake basket to rearrange tofu, and continue cooking for 3 more minutes or until golden brown.
  • In a bowl, combine 1/3 cup of Buffalo sauce with cooked tofu bites, toss to coat. Drizzle the rest of the Buffalo sauce over tofu and toss again. Serve hot.
