Festive pumpkin-cranberry cookies with walnuts and fresh cranberries, ideal for the holiday dessert spread.
Ingredients:
  • 1 cup white sugar
  • 0.5 cup butter, softened
  • 1 cup solid pack pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2.25 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 1 cup halved fresh cranberries
  • 0.5 cup chopped walnuts
  • 1 tablespoon orange zest
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease two cookie sheets.
  • In a large bowl, use an electric mixer to blend the sugar and butter until creamy and fluffy. Add pumpkin purée, egg, and vanilla, and mix well.
  • In a bowl, sift flour, baking powder, baking soda, cinnamon, and salt together. Blend the flour mixture into the pumpkin mixture until well combined. Fold in cranberries, walnuts, and orange zest. Place teaspoonfuls of dough 2 inches apart on the baking sheets.
  • Bake in the oven until the edges turn golden brown, about 10 to 12 minutes.
  • Transfer the dish out of the oven onto wire racks to cool.
