Indulgent holiday treat: Cranberry pumpkin chocolate chip bread.
Ingredients:
  • 2 teaspoons all-purpose flour, or as needed
  • 2 cups white sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 1 cup canned pumpkin
  • 0.5 cup vegetable oil
  • 1 cup dried cranberries
  • 0.75 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then generously grease and flour two 8x4x2-inch loaf pans using 2 teaspoons of flour.
  • Mix together 2 1/4 cups of flour, sugar, cinnamon, baking soda, ginger, nutmeg, cloves, and salt in a bowl. In another bowl, combine pumpkin, oil, and eggs. Add the pumpkin mixture into the flour mixture and gently mix until just combined. Fold in cranberries and chocolate chips. Pour the batter into loaf pans and bake.
  • Bake the loaves in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
