Enhance cranberry pumpkin muffins with citrusy orange zest.
Ingredients:
  • 2 eggs, slightly beaten
  • 1 cup solid pack pumpkin
  • 0.5 cup corn oil
  • 2 tablespoons orange zest
  • 2.5 cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1.5 cups cranberries, halved
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and outfit 24 muffin cups with paper liners.
  • In a small mixing bowl, whisk together eggs, sugar, pumpkin, corn oil, and orange zest until the mixture is velvety and well-combined.
  • In a large mixing bowl, combine flour, pumpkin pie spice, baking soda, and salt using a fork. Create a well in the center of the mixture. Pour in the pumpkin mixture and stir until just moistened to form a batter. Gently fold in the cranberries.
  • Divide the batter evenly among the lined muffin cups.
  • Bake in the preheated oven for 20 to 25 minutes until golden and the tops spring back when lightly pressed.
