Ingredients:
  • For the chickpeas:
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 tablespoon canola or vegetable oil
  • Za'atar seasoning:
  • 2 teaspoons fresh thyme, minced
  • 1 teaspoon za’atar seasoning
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper
  • Spicy seasoning:
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne
  • French herb seasoning:
  • 1 teaspoon Herbs de Provence
  • 1/4 teaspoon freshly cracked black pepper
  • 1 teaspoon lemon zest
  • Italian seasoning:
  • 1 teaspoon finely grated Parmesan or Pecorino Romano cheese
  • 1 teaspoon Italian seasoning or equal parts oregano, thyme, basil, and marjoram
Instructions:
  • Preheat the air fryer to 390°F for 10 minutes or as directed in the manual.
  • Dry the chickpeas thoroughly using paper towels, a clean kitchen towel, or a salad spinner. Remove any loose skins.
  • Prepare the chickpeas: Whisk together oil and spice mix in a bowl, then gently toss in the chickpeas until evenly coated.
  • Crisp up the chickpeas in the preheated air fryer for 8 to 10 minutes until crunchy. If desired crispiness isn't achieved, cook for an additional 1 to 3 minutes. Some chickpeas may 'pop,' which is normal.
  • Perfect and present: Transfer the chickpeas from the basket to a bowl. Taste and adjust seasoning with extra salt, pepper, or seasonings as desired. Enjoy promptly as the crispy texture won't last.
