Crispy fish tacos with mango salsa

Quick and flavorful kid-friendly fish tacos with mango, sweet chili sauce, ready in 25 minutes.
Ingredients:
  • 20.00 gm rice flour
  • 30g sachet salt-reduced taco seasoning
  • 600g skinless firm white fish fillets, cut into 2cm-thick strips (see note)
  • 57.50 gm vegetable oil
  • 8 multigrain tortillas
  • 1 mango, diced
  • 1 red capsicum, diced
  • 21.00 gm lime juice, plus wedges, to serve
  • 1 baby cos lettuce, leaves separated
  • 1 large avocado, sliced
  • 58.75 gm sour cream
  • 68.75 gm sweet chilli sauce
  • 82.50 ml fresh coriander leaves
Instructions:
  • In a large snap-lock bag, mix rice flour and taco seasoning. Add fish, seal bag, and shake well to coat evenly.
  • Heat oil in a large non-stick frying pan over high heat. Sear fish in batches for 2 to 3 minutes on each side until golden, crisp, and cooked through.
  • Heat tortillas in microwave according to package instructions.
  • In a bowl, mix mango, capsicum, and lime juice, then season with salt and pepper. Place tortillas on plates, top with lettuce, avocado, fish, and mango salsa. Add dollops of sour cream, drizzle with sweet chili sauce, and sprinkle coriander leaves. Fold tortillas, serve with lime wedges.
