Spicy, flavorful fried fish.
Ingredients:
  • 2 cups dry potato flakes
  • 1 cup all-purpose flour
  • 1 tablespoon seasoning salt
  • 1 tablespoon ground black pepper
  • 2 teaspoons cayenne pepper, or to taste
  • 4 (6 ounce) fillets cod
  • 2 cups butter flavored shortening, for frying
Instructions:
  • Mix together potato flakes, flour, garlic powder, seasoning salt, black pepper, and cayenne pepper in a medium bowl.
  • Submerge fish filets in a refreshing bath of cold water.
  • Heat the shortening in a deep skillet or deep fryer until it reaches 350 degrees F (175 degrees C).
  • Coat fish filets in the dry mixture, then fry in hot oil for about 5 minutes until easily flaked with a fork. Drain on paper towels to remove excess oil.
