Crispy ginger and garlic chicken wings

Irresistibly crunchy Chinese-inspired chicken wings that will leave you craving more!
Ingredients:
  • 1kg RSPCA approved chicken wings
  • 21.00 gm light soy sauce
  • 1 tsp Chinese five spice powder
  • 1 tsp sesame oil
  • 20.00 ml fresh minced ginger
  • 20.00 ml fresh minced garlic
  • 2.40 gm salt
  • 1 egg, lightly beaten
  • 62.50 ml plain flour
  • 1-260.00 gm cornflour
  • 2 litres vegetable oil, for deep frying
  • Sea salt flakes, for serving
Instructions:
  • Slice the chicken wings into three pieces at each joint with a sharp knife. Combine them in a bowl with light soy sauce, five spice, sesame oil, garlic, ginger, and salt. Wrap the bowl in plastic wrap and refrigerate for at least 1 hour to let the flavors marinate.
  • Heat vegetable oil in a wok or large saucepan until it reaches 170 – 180°C before cooking the chicken.
  • Combine egg and plain flour in a bowl with chicken wings, using your hands to mix thoroughly. In a separate bowl, coat each chicken wing segment individually in corn flour, then set aside and continue with the rest of the wings.
  • Add half the chicken wings to the hot oil and fry for 5-10 minutes until they turn golden, crispy, and fully cooked. Drain on paper towels, season with a pinch of salt, and serve.
