Crispy fish fillets with Progresso® panko breadcrumbs and herbs - ready in 25 minutes!
Ingredients:
  • 1 lb flounder fillets (about 1/2 inch thick), cut into 4 serving pieces
  • 2 eggs
  • 1 1/4 cups Progresso™ panko crispy bread crumbs
  • 1 teaspoon grated lemon peel
  • 1 teaspoon dried marjoram leaves
  • 1/4 teaspoon pepper
  • 1/4 cup olive or vegetable oil
Instructions:
  • Pat the fish dry with paper towels. In a shallow dish, thoroughly whisk the eggs. In a separate shallow dish, combine bread crumbs, lemon peel, marjoram, salt, and pepper.
  • In a large nonstick skillet, warm up 2 tablespoons of oil over medium heat. Dip the fish in beaten eggs, then coat thoroughly with the breadcrumb mixture. Place half of the fish in a single layer in the skillet. Cook for 3 to 4 minutes, flipping once, until the fish is golden brown, crispy, and flakes easily with a fork.
  • Transfer the cooked fish from the skillet to a plate and cover to keep warm. Repeat the process with the remaining oil and fish.
