Crispy pan-fried potatoes

Irresistible crispy potatoes with tangy sun-dried tomato flavor.
Ingredients:
  • 1kg desiree potatoes, peeled
  • 2.40 gm sea salt
  • 1/4 tsp cracked black pepper
  • 56.88 gm olive oil
  • 62.50 ml semi-dried tomatoes, chopped
  • 62.50 ml flat-leaf parsley leaves, chopped
Instructions:
  • Cube the potatoes into 1.5cm pieces. Season with salt and pepper, then mix until evenly seasoned.
  • In a large non-stick frying pan over medium heat, heat oil. Add potato and cook for 20 minutes, turning often, until golden. Remove from heat, then add tomato and parsley. Gently toss and serve.
