Crispy, juicy panko chicken thighs coated in paprika, mayo, and garlic breadcrumbs; baked to perfection for a simple, flavorful meal.
Ingredients:
  • cooking spray
  • 1 cup mayonnaise
  • 0.75 cup panko bread crumbs, or as needed
  • 4 bone-in chicken thighs
Instructions:
  • Preheat the oven to 375°F (190°C) and line a baking dish with aluminum foil, then grease it with cooking spray.
  • In a bowl, blend mayonnaise with paprika until smooth. In another bowl, combine panko and garlic powder.
  • Coat each chicken thigh generously with the creamy mayonnaise mixture, ensuring every inch is covered with the crispy panko coating. Transfer them to the baking dish and give them a light spritz of cooking spray for a golden finish.
  • Roast the chicken in the oven until fully cooked, about 1 hour. Ensure it reaches an internal temperature of at least 165 degrees F (74 degrees C) near the bone.
