Crispy Peking duck in pancakes

Make your own crispy duck pancakes at home with this easy Chinese takeaway recipe.
Ingredients:
  • 1.2 kg duck
  • salt
  • five-spice
  • fresh ginger
  • 10-12 destoned plums
  • 5 tablespoons sugar
  • 2 pinches five-spice
  • 2 tablespoons soy sauce
  • ½ teaspoon chilli powder
  • grated orange zest
  • ½ cucumber
  • 1 bunch spring onions
  • 2 packs pre-made pancakes
Instructions:
  • Preheat the oven to 170ºC/325ºF/gas 3. Season a 1.2kg duck generously with salt inside and out, then coat with five-spice and rub with grated ginger. Roast the duck in a tray, periodically spooning out excess fat for crispy skin. Cook for about 2 hours until the leg meat is tender and skin is crisp. For the plum sauce, cook 10-12 plums, 5 tbsp sugar, five-spice, soy sauce, chili powder, and water until glossy. Optionally add orange zest. Slice half a cucumber and a bunch of spring onions. Steam pre-made pancakes. Once the duck is cool, shred the meat, and assemble pancakes with duck, spring onion, cucumber, and plum sauce. Enjoy!
