Make mouthwatering crispy carnitas effortlessly in your slow cooker with just a handful of ingredients.
Ingredients:
  • 4 pounds boneless pork shoulder
  • 1 tablespoon kosher salt
  • 1 teaspoon pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons ancho chili powder (or regular chili powder)
  • 1 teaspoon cumin
  • 2 teaspoons olive oil
  • 1 orange, cut in half, juiced, rinds reserved
  • 1 lime, juiced
  • 1 white onion, quartered
  • 2 bay leaves
  • Tortillas, cilantro, diced white onion and lime wedges for serving or as desired
Instructions:
  • Cut the pork into 5 to 6 large chunks, then generously season each piece with a perfect blend of salt, pepper, garlic powder, chili powder, and cumin.
  • In a hot skillet, sear pork until golden brown on one side for 4-5 minutes. Flip and cook the other side for 3-4 minutes. If needed, do this in two batches. Transfer browned pork to a slow cooker.
  • Add onions to the sizzling skillet and sauté for 1 minute. Pour in a flavorful mix of orange juice, lime juice, and 1 1/4 cups water to deglaze the pan, making sure to scrape up all the tasty browned bits. Then, pour this savory liquid over the pork in the slow cooker, toss in the bay leaves, and cover for a delicious meal in the making.
  • Cook the pork on High for 4 to 5 hours or on Low for 6 to 7 hours until it is extremely tender.
  • Preheat the broiler. Take the pork out of the slow cooker and shred it into 2 to 3 inch pieces. Place the shredded pork on a rimmed baking sheet. Drizzle some of the cooking juices over the pork, saving about 1 cup for later. Broil the pork for 3 to 5 minutes until crispy and golden brown, tossing halfway through if needed.
  • Serve the dish in toasted tortillas topped with jalapeño slices, chopped onion, cilantro, and lime wedges, or any other toppings you prefer.
