Crispy egg rolls filled with savory tofu, bacon, and veggies, perfect for snacking.
Ingredients:
  • 1 (16 ounce) package tofu, drained and cubed
  • 1 yellow onion, roughly chopped
  • 6 large green onions, chopped
  • 1 medium red bell pepper, coarsely chopped
  • 8 cloves garlic
  • 20 mushrooms
  • 1 tomato, coarsely chopped
  • 0.75 cup crumbled cooked bacon
  • 1 tablespoon fish sauce
  • 2 tablespoons red wine
  • 0.25 cup chopped fresh Italian parsley
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon curry powder
  • 0.25 teaspoon mustard powder
  • 0.25 teaspoon dill weed
  • 0.5 teaspoon ground ginger
  • 1 (12 ounce) package egg roll wrappers
  • canola oil for frying
Instructions:
  • Combine tofu, yellow onion, green onion, red pepper, garlic, mushrooms, tomato, and bacon in a food processor. Add fish sauce, red wine, parsley, salt, pepper, curry powder, mustard powder, dill, and ginger. Blend until smooth. Enjoy!
  • Lay an egg roll wrapper on your workspace with a corner facing you. Add 1 to 2 tablespoons of the tofu mix between the center and bottom corner. Fold the nearest corner over the filling, then fold in the sides. Dampen the top corner with water, and roll tightly.
  • Heat a generous amount of canola oil in a large pot to 350 degrees F (175 degrees C). Fry the wraps in batches until golden brown on the outside and cooked in the center. Drain on paper towels and serve piping hot.
