Ring in the New Moon with a quick and delicious Vietnamese fish salad.
Ingredients:
  • 36.80 gm vegetable oil
  • 4 x 200g thick firm white fish fillets (see notes)
  • 20.00 ml plain flour
  • 250.00 ml fresh coriander sprigs
  • 40.00 ml granulated nuts (see notes)
  • 1 Lebanese cucumber, cut into matchsticks
  • 1 green onion, cut into matchsticks
  • 125.00 ml Vietnamese dipping sauce
  • Steamed brown rice or white rice, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat oil. Coat fish lightly in flour, ensuring it's fully covered. Season with salt and pepper. Cook for 3 to 5 minutes, turning occasionally, until golden and fully cooked. Transfer fish to a plate and cover to keep warm.
  • Combine fragrant coriander, crunchy nuts, fresh cucumber, sharp onion, and flavorful dipping sauce in a bowl. Season with a pinch of salt and a sprinkle of pepper for a delicious and well-balanced dish.
  • Present each delicate fish fillet on a beautiful plate, generously crowned with a vibrant salad. Accompany with a side of fluffy rice and fresh lime for a perfect meal.
