Crispy-skinned salmon with potato and dill salad

Whip up a mouthwatering salmon dinner with just 6 simple ingredients for a quick and tasty weeknight meal.
Ingredients:
  • 800g chat potatoes
  • 235.00 gm light sour cream
  • 42.00 gm lemon juice, plus wedges to serve
  • 1 green onion, thinly sliced
  • 20.00 ml finely chopped fresh dill leaves
  • 4 x 150g salmon fillets (skin on)
  • Extra dill sprigs, to serve
Instructions:
  • Boil potatoes in a generously salted pot of water until tender, approximately 15 minutes. Drain and allow to cool before peeling and chopping.
  • In a bowl, mix together sour cream, fresh lemon juice, diced onion, and chopped dill. Add in the potatoes and season with a pinch of salt and pepper. Gently toss everything together until well combined.
  • Lay the salmon on a large plate, skin-side up. Drizzle with oil and sprinkle with salt, then rub it into the skin.
  • 1. Preheat a non-stick frying pan over medium-high heat. Place the salmon in the pan, skin-side down, and cook for 3 to 4 minutes until the skin is crispy. Flip the salmon and cook covered for 4 to 5 minutes for medium doneness. Serve with lemon wedges and potato salad topped with extra dill.
