Savor the best of summer with a delightful baked dish pairing tomatoes and squash.
Ingredients:
  • 4 yellow squash, sliced
  • 4 medium tomatoes, sliced
  • 2 green onions, chopped
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 0.25 teaspoon freshly ground black pepper
Instructions:
  • Heat the oven to a toasty 400 degrees F (200 degrees C), then give a gentle grease to a 1 quart casserole dish.
  • Layer the squash and tomatoes in the casserole dish, then top with green onions. Combine vinegar, oil, mustard, salt, and pepper in a bowl; pour over the vegetables.
  • Bake in the preheated oven for 15 minutes, or until the squash is tender. Let it cool for 15 minutes before serving.
