"Southern-style pan-fried crookneck squash with a delicious cornmeal crust."
Ingredients:
  • 3 tablespoons canola oil, or as needed
  • 3 large crookneck (yellow) squash
  • salt to taste
  • 0.5 cup cornmeal
Instructions:
  • Cover the bottom of a large skillet with canola oil and heat over medium to medium-high heat.
  • Slice the squash and season with salt, then coat the slices in cornmeal.
  • Place the squash slices in the hot oil, let them fry undisturbed for 5 minutes. Flip and fry until crispy and golden brown on both sides, about 10 to 15 minutes in total. Serve promptly.
