Italian Crostini with fresh tomatoes, basil, and mozzarella on crispy bread.
Ingredients:
  • 12 slices Italian bread, each 1/2 inch thick
  • 1/4 cup olive or vegetable oil
  • 1 large tomato, chopped (1 cup)
  • 3 tablespoons chopped fresh basil leaves
  • 1 tablespoon large capers or chopped ripe olives
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 12 slices (1 ounce each) mozzarella cheese
Instructions:
  • Preheat oven to 375°F. Place bread slices on a baking sheet and generously drizzle each slice with 1 teaspoon of oil.
  • Combine the tomatoes, basil, capers, salt, and pepper. Layer half of the tomato mixture onto the bread slices, then place a slice of cheese on top of each. Finish by spreading the rest of the tomato mixture over the cheese.
  • Bake for 8 minutes, or until the bread is piping hot and the cheese is gooey. Serve immediately.
