Authentic Venetian fried pastries, a beloved Italian treat for 'Carnevale' and special holidays. An heirloom recipe cherished by Italian-Americans.
Ingredients:
  • 1.5 tablespoons sugar
  • 3 large eggs, room temperature
  • 1 (5 ounce) can evaporated milk
  • 0.5 teaspoon vanilla extract
  • 2 tablespoons rum
  • 3.5 cups all-purpose flour
  • vegetable oil for frying
  • confectioners' sugar
Instructions:
  • Using an electric mixer on high speed, whip salt, sugar, and eggs until extremely fluffy. Mix in evaporated milk, vanilla extract, and rum. Slowly incorporate flour; knead thoroughly using dough hook until dough starts to blister, approximately 10 minutes. (If dough sticks to bowl after 5 minutes, add 2 tablespoons of extra flour, 1/2 tablespoon at a time.) Take out dough, cover with plastic wrap, and let it rest for 20 minutes.
  • Heat 2 inches of oil in a deep fryer or Dutch oven over medium heat until it reaches 350 degrees F (175 degrees C).
  • Divide dough into small portions. Roll out each portion thinly on a floured surface. Cut into long, narrow strips (6 inches by 1 inch). Using a knife, slit the center of each strip and weave one end through the slit.
  • Deep fry until puffy and golden brown, around 1 to 2 minutes. Drain on paper towels, dust with confectioners' sugar, and store in an airtight container.
