Spicy fish burger with lemon aioli, a delicious weeknight dinner.
Ingredients:
  • 140g breadcrumbs
  • 3 tsp Cajun spice
  • 4 x 150g firm white fish pieces, skin removed (such as barramundi)
  • olive oil
  • 10.60 gm lemon juice
  • 100g mayonnaise
  • 4 Turkish bread rolls, halved
  • mixed lettuce leaves, to serve
  • 2 roma tomatoes, sliced, to serve
  • 1/2 red onion, thinly sliced, to serve
Instructions:
  • In a large bowl, mix the breadcrumbs and Cajun spice. Coat the fish evenly by pressing it into the breadcrumb mixture in batches.
  • In a large non-stick frying pan over medium heat, heat a touch of olive oil. Cook the fish in batches for 3-4 minutes on each side until golden and flaky when tested with a fork.
  • Combine zesty lemon juice with creamy mayonnaise in a small bowl. Toast the bread rolls until they are gloriously golden-brown.
  • Spread the flavorful mayonnaise mixture on the cut sides of the bread rolls. Layer with crisp lettuce, juicy tomato, pungent onion, and flaky fish. Enjoy promptly.
