Golden crumbed pork chops with cheesy vegetables - a family favorite meal.
Ingredients:
  • 35g plain flour
  • 1 Free Range Egg
  • 4 Pork Loin Chops
  • 75g breadcrumbs
  • 25g parmesan
  • 62.50 ml flat-leaf parsley, finely chopped
  • 2 x 150g pkts Broccoli & Cauliflower Florets
  • 1 carrot, thinly sliced
  • 120g pea
  • 490g jar three-cheese pasta bake sauce
  • 60g cheddar cheese
  • Olive oil, to shallow-fry
Instructions:
  • Begin by preheating your oven to 180C. Mix together breadcrumbs, parmesan, and parsley in a shallow bowl. Season the flour on a plate. Whisk the egg in another shallow bowl. Coat the pork with flour, then dip into the egg, followed by the breadcrumb mixture for a crispy coating. Refrigerate the pork on a plate covered with plastic wrap for 20 minutes to chill.
  • In an ovenproof dish, mix the broccoli mixture, carrot, and peas. Drizzle the sauce on top and generously sprinkle with cheese. Bake for 25-30 mins until vegetables are tender and cheese is golden brown.
  • Heat oil in a large frying pan over medium heat. Cook the pork for 3-4 mins on each side until golden brown and cooked to your preference. Transfer to a plate lined with paper towel and let it rest, covered, for 5 mins.
  • Plate the pork alongside the savory vegetable medley and lemon wedges for a vibrant and flavorful presentation.
