Crunchy Asian salad

Create a flavorful Asian-style crunchy noodle salad with fresh herbs and bold flavors.
Ingredients:
  • 1/2 small Chinese cabbage, (wombok) shredded
  • 50g snow-pea sprouts, trimmed, halved
  • 1 large carrot, peeled, sliced thinly into batons
  • 1 red capsicum, seeded, thinly sliced
  • 250.00 ml coriander leaves
  • 125.00 ml fresh mint leaves, torn
  • 125.00 ml toasted peanuts, chopped
  • 62.50 ml pickled ginger slices
  • 100g packet fried crunchy noodles
  • Zest and juice of 1 lime
  • 24.40 gm fish sauce
  • 1 fresh long red chilli, deseeded, finely chopped
  • 8.00 gm brown sugar
  • 1 garlic clove, crushed
Instructions:
  • Combine all salad ingredients in a spacious mixing bowl.
  • Combine all ingredients in a jug and whisk to prepare the dressing.
  • Just before serving, drizzle the dressing over the salad and toss thoroughly to ensure even coating.
