Delicious white fish with spinach and cheesy crust, perfect for busy weeknights.
Ingredients:
  • cooking spray
  • 1 pound fresh spinach
  • 1 teaspoon garlic salt
  • 1 pound cod, cut into large pieces
  • 1 lemon, zested and juiced
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon sea salt
  • 0.5 teaspoon cracked black pepper
  • 1 cup shredded sharp Cheddar cheese
  • 0.25 cup Italian-seasoned bread crumbs
  • 0.25 cup panko bread crumbs
Instructions:
  • Heat the oven to 450 degrees F (230 degrees C) and give a 9x13-inch casserole dish a quick spray of cooking spray.
  • Spread spinach evenly in the casserole dish and lightly season with garlic salt. Place the fish on top of the spinach, arranging the pieces close together with larger ones around the edges. Sprinkle lemon zest, lemon juice, dill, sea salt, and black pepper over the fish.
  • Mix together the savory Cheddar cheese, flavorful Italian-seasoned bread crumbs, and crispy panko bread crumbs in a bowl. Sprinkle the mixture evenly on top of the fish, then cover the dish with foil.
  • Bake in the preheated oven for 12 to 15 minutes. Uncover and continue cooking until the fish flakes easily with a fork and the topping is lightly browned and crunchy, about 5 to 8 more minutes.
