Prepare a delicious Crunchy Chicken Salad for your upcoming picnic!
Ingredients:
  • 3 tablespoons butter or margarine
  • 1 package (3 ounces) Oriental-flavor ramen noodle soup mix
  • 2 tablespoons sesame seed
  • 1/4 cup sugar
  • 1/4 cup white vinegar
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon pepper
  • 2 cups cut-up cooked chicken
  • 1/2 cup dry-roasted peanuts
  • 4 medium green onions, sliced (1/4 cup)
  • 1 bag (16 ounces) coleslaw mix
Instructions:
  • In a 10-inch skillet over medium heat, melt the butter. Add the seasoning packet from the noodles. Break the block of noodles into bite-size pieces directly into the skillet, then stir to coat the noodles with the butter mixture. Cook and stir constantly for 2 minutes, then add the sesame seeds. Continue cooking and stirring constantly for about 2 more minutes until the noodles turn golden brown.
  • Combine sugar, vinegar, oil, and pepper in a large bowl. Add the remaining ingredients and the noodle mixture, then toss everything together.
