Crunchy Cinnamon Burst Cheerios® Cookies

Wholesome monster cookies loaded with whole grain cereal and goodies.
Ingredients:
  • 2 eggs
  • 1 1/2 cups packed brown sugar
  • 1/2 cup butter or margarine, softened
  • 1/2 cup shortening
  • 2 3/4 cups Gold Medal™ all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 teaspoons ground cinnamon
  • 1 1/2 cups Cinnamon Burst Cheerios™ cereal
  • 1 cup flaked coconut
  • 1/2 cup chopped pecans
  • 3 tablespoons granulated sugar
Instructions:
  • Preheat oven to 375°F.
  • In a large bowl, use an electric mixer to blend brown sugar, butter, shortening, and eggs until creamy. Add flour, cream of tartar, baking soda, salt, and 1/4 teaspoon of cinnamon. Mix on low speed until combined. Fold in cereal, coconut, and pecans.
  • Combine granulated sugar and cinnamon in a small bowl. Form the dough into 1 1/4-inch balls and coat them in the sugar mixture. Arrange them 2 inches apart on ungreased cookie sheets, then flatten them with a sugared glass.
  • Bake for 8 to 10 minutes or until lightly golden. Sprinkle with sugar mixture, then cool for 1 minute before transferring to cooling racks. Let them cool completely, which should take about 30 minutes.
