Oven-Baked Sweet Potato Chips with Honey Butter

Crunchy cinnamon-sugar sweet potato chips with honey butter.
Ingredients:
  • 1 cup panko bread crumbs
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 2 large sweet potatoes, peeled and sliced into 1/8-inch thick rounds
  • 2 eggs, beaten
  • 1 stick salted butter, softened
Instructions:
  • Preheat the oven to 425°F (220°C) and line a large rimmed baking sheet with foil, then lightly coat with cooking spray.
  • Combine panko, brown sugar, and cinnamon in a small bowl. Dip sweet potato slices in beaten egg, coat them with the panko mixture, and lay them out in a single layer on the baking sheet. Lightly spray the tops with cooking spray before baking.
  • Bake until the chips are golden brown and crunchy, about 20 minutes in the preheated oven.
  • Combine butter and honey in a bowl. Serve chips with the delicious honey butter.
