Ingredients:
  • 8 sebago potatoes, peeled, halved
  • 1 large pinch saffron threads
  • 40.00 ml duck fat or olive oil
Instructions:
  • Preheat oven to 220°C. In a large saucepan, combine the potatoes and saffron; cover with cold water. Bring to a boil over high heat, then simmer on low for 10 minutes until potatoes are slightly tender. Drain and let cool and dry slightly.
  • Scratch the sides of the potatoes with a fork and place in a roasting pan. Season generously with salt and pepper, then drizzle with duck fat or oil. Bake in a preheated oven, turning occasionally, for 30 minutes until golden brown and crispy. Serve immediately after removing from the oven.
