Revitalize your slaw with nutrient-rich silverbeet. This easy, no-cook, vegan dish is bursting with flavor and fiber.
Ingredients:
  • 1 bunch silverbeet, trimmed
  • 1 beetroot, peeled, cut into matchsticks (see Notes)
  • 1 granny smith apple, cut into matchsticks
  • 2 celery stalks, thinly sliced
  • 28.75 gm walnuts, toasted
  • 40.00 ml pepitas, toasted
  • 1 tsp fennel seeds, roughly crushed
  • 62.50 ml cider vinegar
  • 56.88 gm extra virgin olive oil
  • 11.80 gm mustard
  • Pinch of sugar
Instructions:
  • Slice the silverbeet leaves and stems thinly, then place them in a large bowl. Add beetroot, apple, celery, walnuts, and pepitas, and mix everything together.
  • Combine fennel seeds, vinegar, oil, mustard, sugar, salt, and pepper in a screw-top jar. Secure the lid and shake well to mix.
  • Drizzle the flavorful dressing over the fresh salad and gently toss to mix. Enjoy right away (refer to notes for additional tips).
