Crunchy waldorf salad with blue cheese

Indulgent salad with sweet apples, bitter walnuts, and gooey blue cheese chunks.
Ingredients:
  • 65.00 gm buttermilk
  • 19.80 gm whole-egg mayonnaise
  • 18.80 gm sour cream
  • 21.00 gm lemon juice
  • 2 small pink lady apples, cut into 2.5cm cubes
  • 2 celery stalks, halved lengthways, chopped
  • 37.95 gm chopped walnuts, toasted
  • 1/2 butter lettuce, leaves separated, torn
  • 50g blue cheese, finely crumbled
Instructions:
  • In a bowl, combine buttermilk, mayonnaise, sour cream, and 2 teaspoons of lemon juice. Whisk until creamy. Season with salt and pepper to taste.
  • In a bowl, combine apple with the remaining lemon juice and toss to coat. Add celery and walnuts, then toss to combine.
  • Lay out lettuce leaves on a platter. Spoon over the apple mixture. Scatter cheese on top. Finish with a drizzle of dressing. Serve and enjoy!
