CSA Vegetable Soup with Kale, Chard, and Garlic Scapes

Elevate veggie soup with a blend of garlic scapes, green onions, and nutrient-rich pureed greens like kale, chard, and lettuce.
Ingredients:
6green onions, chopped
2garlic scapes, chopped
0.5 cupolive oil
1headlettuce, separated into leaves
1bunchrainbow chard, trimmed and rinsed
1bunchkale, stems removed
2cups vegetable broth
1tablespoondried savory
1tablespoondried marjoram
1cupGreek yogurt
1tablespoonItalian seasoning
Instructions:
Blend green onions and garlic scapes until smooth in a food processor.
In a large soup pot, warm the oil over low heat. Add the onion and garlic mix and sauté until it begins to dehydrate, about 2 to 3 minutes.
Blend the lettuce, chard, and kale until smooth. Transfer to a pot and cook for 4 to 5 minutes. Stir in vegetable broth, savory, marjoram, salt, and pepper. Simmer for 40 to 45 minutes until the kale and chard are tender.
Combine Greek yogurt and fragrant Italian seasoning until well blended. Ladle the soup into individual bowls and top each with a generous dollop of the yogurt mixture.
