Cuban-inspired millet with toasted onions and carrots, a savory side dish.
Ingredients:
  • 1 carrot, chopped
  • 2 cloves garlic, crushed
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 cup millet
  • 2 cups vegetable broth
  • 0.25 cup chopped fresh cilantro, or more to taste
Instructions:
  • Pulse carrot and garlic in a food processor until finely minced.
  • In a pot over medium heat, sauté carrots, onions, and green bell pepper in olive oil until softened, around 10 minutes. Add millet and toast until fragrant, about 3 minutes.
  • Gently pour vegetable broth into the millet mixture and generously season with salt and black pepper. Simmer on low heat until all the broth is absorbed and the millet is tender, approximately 20 minutes. Finally, mix in fresh cilantro for a burst of flavor.
