Succulent pork dish infused with fresh citrus flavors.
Ingredients:
  • 62.50 ml chopped fresh coriander
  • 2 long fresh red chillies, deseeded, finely chopped
  • 2 garlic cloves, crushed
  • 80ml (1/3 cup) fresh orange juice
  • 60ml (1/4 cup) fresh lime juice
  • 500g pork loin medallion steaks
  • 190g (1 cup) couscous
  • 220ml boiling water
  • Olive oil spray
  • Steamed green beans, to serve
Instructions:
  • Mix coriander, chili, garlic, orange juice, and lime juice in a bowl. Coat the pork with half of the mixture in a glass dish. Marinate in the refrigerator for 30 minutes.
  • Place the couscous in a heatproof bowl and cover it with water. Allow it to sit for 4 minutes until the liquid is absorbed, then fluff the grains with a fork.
  • Preheat a large frying pan or chargrill over medium-high heat and lightly grease with olive oil spray. Cook the pork for 3-4 minutes on each side until it reaches your preferred doneness. Remove from heat, cover with foil, and let it rest for 5 minutes before serving.
  • Combine the rest of the coriander mixture with the couscous, then mix well and add a sprinkle of pepper to taste.
  • Slice the pork thinly, then divide the couscous mixture and beans among serving plates. Finish by topping each plate with the sliced pork before serving.
