Classic white bread with water as the sole liquid, baked on a cornmeal dusted surface and topped with sesame seeds for added crunch.
Ingredients:
  • 2.25 teaspoons active dry yeast
  • 2 cups warm water (110 degrees F/45 degrees C)
  • 1 tablespoon white sugar
  • 1 tablespoon salt
  • 8 cups all-purpose flour
  • 1 tablespoon cornmeal
  • 1 tablespoon sesame seeds
  • 2 tablespoons cold water
Instructions:
  • Combine yeast with warm water or potato water in a large bowl until dissolved. Mix in sugar and salt, then incorporate 7 cups of flour.
  • Knead the dough on a floured surface for 7 minutes, adding the final cup of flour. Transfer the dough to a greased bowl and let it rise until doubled in size.
  • Shape the dough into 2 long or round loaves on a lightly floured board. Sprinkle cornmeal onto a greased baking sheet and place the loaves on top. Make slashes on the top with a sharp knife. Cover and allow to rise until almost doubled in size.
  • Gently brush the loaves with cold water and sprinkle with sesame seeds, if desired, before placing them in a cold oven.
  • Preheat oven to 400 degrees F (200 degrees C). Bake for 45 minutes or until golden brown, brushing with cold water twice during baking.
