Cuban-Style Yuca

Tender yuca paired with a zesty onion, garlic, and lemon dressing. A unique and refreshing side dish.
Ingredients:
  • 2 pounds yuca, peeled and sliced lengthwise
  • 0.5 teaspoon salt
  • 0.5 onion, diced
  • 0.5 teaspoon fresh lemon juice
Instructions:
  • Place yuca in a pan and cover with water. Stir in salt. Bring to a boil over medium-high heat, cover, and cook until tender, approximately 15 minutes. Drain and transfer yuca to a serving plate.
  • Heat olive oil in a pan over medium heat, then sauté onion and garlic with lemon juice for 5 minutes.
  • Drizzle the hot olive oil mixture over the yuca and serve promptly.
