Cuban-Style Yellow Rice

Vibrant Cuban yellow rice, colored with natural annatto, pairs perfectly with peas and pimento slices for an authentic Caribbean flair.
Ingredients:
  • 4 cups long grain rice
  • 8 cups water
  • 1 small onion, minced
  • 2 teaspoons salt
  • 0.125 teaspoon annatto powder
  • 0.125 teaspoon paprika
  • black pepper to taste
  • 1 cup frozen peas, thawed
  • 1 (4 ounce) jar sliced pimento peppers, for garnish
Instructions:
  • Rinse the rice in a sieve under cold water until the water runs clear, then shake to remove excess water.
  • In a large saucepan with a tight-fitting lid, combine rice, water, onion, salt, annatto powder, paprika, and pepper. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer. After 10 minutes, gently mix in peas. Continue cooking until the water evaporates and the rice is tender, about 15-20 minutes. Serve garnished with pimento slices.
