Instant Pot® Cuban-Style Black Beans

Elevate Cuban black beans with zesty lime juice and fresh cilantro, perfect with yellow or white rice.
Ingredients:
  • 3 slices bacon, chopped
  • 0.5 cup chopped onion
  • 3 tablespoons minced jalapeno pepper
  • 1 tablespoon minced garlic
  • 3 cups water
  • 3 cups chicken broth
  • 1 pound dried black beans
  • 0.25 cup red wine vinegar
  • 1 (1.41 ounce) package sazon seasoning (such as Goya®)
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 limes, cut into wedges, or to taste
  • 0.25 cup chopped cilantro, or to taste
Instructions:
  • Preheat a multi-functional pressure cooker (like Instant Pot®) on the Saute function. Cook bacon until browned, for 5 to 8 minutes. Then, add onion and jalapeno and cook until tender, about 5 minutes. Finally, add garlic and saute for another 30 seconds.
  • In a pot, combine water, chicken broth, dried beans, vinegar, sazon, cumin, oregano, bay leaf, salt, and pepper. Stir well. Seal the pot shut, choose Manual, and set the timer for 40 minutes. Let pressure build for 10 to 15 minutes.
  • Let pressure release naturally for 15 minutes following the manufacturer's guidelines. Then, unlock and lift the lid. Stir in the beans, discard the bay leaf, and season with salt and pepper to your liking.
  • Garnish the beans with a fresh lime wedge and a sprinkle of cilantro on top before serving.
