Easy weeknight Cuban pork and rice dish featuring flavorful mojo sauce.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 pork tenderloin (1 1/4 lb), trimmed, cut in 1-inch pieces
  • 1 1/4 cups Progresso™ chicken broth (from 32-oz carton)
  • 1/2 cup orange juice
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 5 cloves garlic, finely chopped
  • 1 teaspoon ground cumin
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1 cup uncooked regular long-grain white rice
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh cilantro leaves
  • Thick & chunky salsa, as desired
Instructions:
  • Select SAUTE on your 6-quart Instant Pot® and set it to normal. Heat oil in the insert then add the pork. Cook for 4 to 6 minutes or until the pork easily releases from the bottom of the insert. Stir and then press CANCEL.
  • Combine the broth, orange juice, taco seasoning mix, garlic, and cumin in the pot. Then add the beans and rice and stir until well mixed.
  • Make sure the lid is secure and set the pressure valve to SEALING. Choose MANUAL setting and cook on high pressure for 12 minutes. Once done, turn off the cooker and release pressure by setting the valve to VENTING for quick release.
  • Incorporate the zesty lime juice, sprinkle with fragrant cilantro, and enjoy alongside flavorful salsa.
