Cucumber and mint salad

Spicy dishes meet their match with this cool and creamy cucumber yogurt salad.
Ingredients:
  • 4 Lebanese cucumbers, ends trimmed, halved lengthways, seeds removed, thinly sliced diagonally
  • 2 green shallots, ends trimmed, thinly sliced
  • 62.50 ml fresh coriander leaves
  • 125.00 ml fresh mint leaves
  • 70g (1/4 cup) natural yoghurt
  • 21.00 gm fresh lime juice
  • 10.00 gm water
  • 1 tsp finely grated lime rind
Instructions:
  • In a medium bowl, mix the cucumber, shallot, coriander, and mint. Chill in the fridge covered with plastic wrap.
  • In a small bowl, mix together yogurt, garlic, lime juice, water, and lime zest. Season with salt and pepper to taste. Cover with plastic wrap and refrigerate for 20 minutes to allow flavors to meld and chill.
  • Transfer the cucumber mixture onto a serving platter and generously drizzle with the creamy yogurt dressing before serving promptly.
