Fresh tabbouleh salad: Cracked wheat mixed with cucumber, ripe tomatoes, green onions, mint, parsley, olive oil, and lemon juice.
Ingredients:
  • 1 cup bulgur
  • 1.6666699647903 cups boiling water
  • 0.33333298563957 cup olive oil
  • 0.33333298563957 cup lemon juice
  • 1 cup chopped green onions
  • 1 cup chopped fresh parsley
  • 0.25 cup chopped fresh mint
  • 3 tomatoes, chopped
  • 1 cucumber - peeled, seeded and chopped
  • ground black pepper to taste
Instructions:
  • In a large bowl, mix bulgur with boiling water. Cover and let soak for 1 hour.
  • Combine oil, lemon juice, onions, parsley, mint, tomatoes, and cucumber in a bowl. Mix well. Season with salt and black pepper to taste. Cover and refrigerate for at least 1 hour.
