Cumin and pea muffins

Kid-friendly pea muffins bursting with flavor.
Ingredients:
  • 9.20 gm olive oil
  • 1 brown onion, grated
  • 1 garlic clove, crushed
  • 10.00 gm ground cumin
  • 250.00 ml frozen peas
  • 300.00 gm self-raising flour
  • 80g butter, melted
  • 1 egg, lightly beaten
  • 257.50 gm milk
Instructions:
  • Preheat your oven to 200°C and generously grease a 12-hole muffin tin.
  • In a frying pan over medium heat, sauté onion and garlic in oil until onion is soft, about 3 minutes. Stir in cumin and peas, and cook for an additional 2 minutes. Remove from heat and let cool.
  • Sift flour into a bowl. In a jug, combine butter, egg, and milk, then mix well. Pour the liquid mixture into the flour and stir gently until almost combined. Fold in the pea mixture. Spoon the batter into muffin holes until three-quarters full.
  • Bake for 18 to 20 minutes, or until a skewer inserted into the center comes out clean. Enjoy warm.
