Spicy black-eyed pea soup with cumin, mustard, chili, and curry powders. Top with bacon, cheese, parsley, and green onions for extra flavor. Perfect for New Year's.
Ingredients:
  • 4 slices bacon
  • 1 green bell pepper, chopped
  • 1 small onion, chopped
  • 2 (15 ounce) cans black-eyed peas, undrained
  • 2 (14.5 ounce) cans diced tomatoes, undrained
  • 1 cup water
  • 1.5 teaspoons salt
  • 1.25 teaspoons cumin
  • 1.25 teaspoons dry mustard
  • 1 teaspoon chili powder
  • 0.5 teaspoon curry powder
  • 0.5 teaspoon pepper
  • 0.5 teaspoon sugar
Instructions:
  • Fry the bacon in a skillet on medium-high heat until crispy and evenly browned. Drain on paper towels and crumble into small pieces once cooled.
  • In the same skillet, sauté the peppers and onion over medium-high heat until they are tender and transparent, approximately 5 minutes.
  • In a large pot, combine black beans, tomatoes, and water. Add peppers, onion, salt, cumin, dry mustard, chili powder, curry powder, pepper, and sugar. Bring to a boil, then simmer covered for 20 to 25 minutes. Serve hot with bacon and your favorite toppings.
