Gluten-free cauliflower and black-eye pea soup with bacon for a lucky New Year.
Ingredients:
  • 0.5 pound bacon, sliced into small pieces
  • 1 tablespoon olive oil
  • 1 large white onion, chopped
  • 2 tablespoons minced garlic
  • 1 teaspoon dried thyme
  • 0.5 cup white wine
  • 8 cups chicken broth
  • 2 (19 ounce) cans black-eyed peas, rinsed and drained
  • 1 head cauliflower, broken into small florets
Instructions:
  • Cook the bacon in a large pot over medium heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon on paper towels.
  • In the same pot, heat olive oil over medium heat. Cook onion, garlic, and thyme until onion softens, about 10 minutes. Pour in the wine, simmer until slightly reduced, about 4 minutes. Add chicken broth, black-eyed peas, and cauliflower. Season with black pepper. Bring to a boil, cover, and simmer for 20 minutes to blend flavors.
  • Take the soup off the heat and allow it to cool for approximately 10 minutes. Use an immersion blender to puree the soup until it is smooth. Sprinkle with bacon pieces before serving.
