Curried Chicken Salad Sandwiches

Elevate sandwiches with juicy chicken, tangy pineapple, and hearty whole wheat bread for a quick and tasty dinner in 20 minutes.
Ingredients:
  • 1/2 cup reduced-fat mayonnaise
  • 1/4 cup plain low-fat yogurt
  • 1 teaspoon curry powder
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 4 cups shredded cooked chicken breast
  • 1/2 cup seedless red grapes, cut in half
  • 1/2 cup chopped walnuts, toasted
  • 1 can (8 oz) pineapple tidbits in juice, drained
  • 1/3 cup finely chopped red onion
  • 8 lettuce leaves
  • 16 slices whole wheat double-fiber bread
Instructions:
  • Combine mayonnaise, yogurt, curry powder, lemon juice, and salt in a large bowl. Mix in chicken, grapes, walnuts, pineapple, and onion until well combined.
  • Arrange a lettuce leaf on each of the 8 slices of bread. Add a generous 1/2 cup of delicious chicken salad on top of the lettuce and sandwich with the remaining bread slices. Enjoy!
