Hearty red lentil soup with fresh veggies and aromatic spices, ready in under an hour.
Ingredients:
  • 1 head cauliflower, chopped into small florets
  • 2 carrots, chopped
  • 2 cups boiling water
  • 1 cube vegetable bouillon
  • 1 (14 ounce) can reduced-fat coconut milk
  • 1 cup red lentils
  • 1 teaspoon garlic powder
  • 1 teaspoon dried onion flakes
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon ground turmeric
  • 0.5 teaspoon ground cumin
  • 1 bunch kale leaves, stems and inner ribs discarded, leaves coarsely chopped
Instructions:
  • In a large pot over medium-high heat, saute cauliflower and carrots in olive oil until softened, about 7 to 8 minutes.
  • In a bowl, combine boiling water and vegetable bouillon, stirring until dissolved. Add the cauliflower mixture, broth, and coconut milk. Bring to a boil.
  • Combine lentils with fragrant spices like garlic powder, onion flakes, curry, paprika, turmeric, and cumin in the pot. Simmer covered for 20 minutes until lentils are tender. Add kale, simmer for 5 more minutes on low heat, then serve.
