Vibrant vegan soup with red lentils, chard, and an aromatic blend of garlic, coriander, cumin, curry, and turmeric.
Ingredients:
  • 2 cups dry red lentils
  • 1 tablespoon olive oil, or to taste
  • 3 tablespoons vegetable bouillon (such as Better Than Bouillon®)
  • 2 white onions, minced
  • 0.5 bulb garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon curry powder
  • 2 (32 fluid ounce) containers vegetable broth
  • 1 bunch Swiss chard
Instructions:
  • Place lentils in a bowl and cover them with water. Let them soak for 15 minutes.
  • In a stockpot over medium heat, heat olive oil and bouillon. Add onions and cook until translucent, about 5 minutes. Mix in garlic, coriander, cumin, turmeric, and curry powder. Continue cooking until onions are tender and browned, adding vegetable broth as needed to prevent burning, about 10 minutes.
  • After draining the lentils, add them to the onion mixture along with the remaining broth. Bring the soup to a boil, then cover the stockpot, reduce the heat, and simmer until the lentils are soft, for about 30 to 45 minutes.
  • Prepare the chard by trimming the leaves, stacking them together, and cutting into 3/4-inch strips. Add the chard to the soup and cook until softened, around 10 minutes.
